Scrambled Eggs with Tomatoes and Bread Sails

Ingredients. Serves 4 people

• 4 eggs 

• 50 g (1.7 oz) tomatoes 

• 100 g (3.5 oz) bread 

Truffle olive oil Galantino 

• Salt 

• Pepper

The intense flavor of truffle enhances the delicacy of eggs.

Preparation

Peel the tomatoes and cut them into cubes, brown them for a few minutes in a pan with Truffle Olive Oil Galantino; break the eggs directly into the pot, beat them with a fork amalgamating the tomatoes, stirring until cooked, then add the salt and pepper.

Serve it seasoned with Truffle Olive Oil Galantino and sails of bread toasted in oven at 180° C for about one minute.

Chef’s Tip

You can serve your eggs with an excellent side dish of mushrooms.
